How to Make Belizean Rice and Beans at Home

Ingredients

  • 2 cups red kidney beans

  • 1 cup coconut milk

  • 2 cloves garlic, crushed

  • 1 onion, chopped

  • 2 cups long-grain white rice

  • 1 sprig of fresh thyme (or 1 tsp dried)

  • 1 tsp salt (or to taste)

  • ½ tsp black pepper

  • Water, as needed

Instructions

  1. Rinse beans and soak overnight in enough water to cover them.

  2. Drain beans, then place them in a pot with fresh water, garlic, and onions. Bring to a boil, then reduce to a simmer and cook until beans are tender (about 1–1.5 hours).

  3. Stir in coconut milk, thyme, salt, and pepper.

  4. Wash the rice and add it to the pot, along with enough water to just cover everything.

  5. Bring to a boil, then reduce heat to low, cover, and let cook until rice is tender and liquid is absorbed (about 20–25 minutes).

  6. Fluff gently with a fork and serve warm.
